Description

Walking Tacos are a fun and easy meal perfect for gatherings, offering a delicious way to enjoy tacos in a portable format.


Ingredients

  • 1 teaspoon olive oil
  • 1 pound lean ground beef
  • 1 1.25 ounce packet taco seasoning
  • 1/4 teaspoon pepper
  • 1 10 ounce can diced tomatoes with green chilis
  • 1 15 ounce can Ranch Style beans
  • 6 1 ounce packages corn chips
  • Shredded cheese
  • Sour cream
  • Sliced green onions, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook for 6-8 minutes, or until no longer pink, breaking it into crumbles. Drain if necessary.
  3. Stir in the taco seasoning mix, pepper, diced tomatoes, and beans.
  4. Bring the mixture to a boil; simmer uncovered for 20 minutes or until it thickens, stirring occasionally.
  5. Just before serving, open the corn chip bags, add the beef mixture, and top with desired toppings. Serve immediately.

Notes

Feel free to customize your toppings to suit different tastes. Store leftover beef mixture in an airtight container in the refrigerator for up to three days.
