Description

A refreshing and light dessert that combines tangy lime and creamy coconut, perfect for hot days or special occasions.


Ingredients

  • 1/2 cup fresh lime juice
  • 1/4 cup water
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1 tablespoon gelatin
  • 1 teaspoon vanilla extract
  • Optional: lime zest for garnish

Instructions

  1. In a saucepan, combine fresh lime juice and water. Heat gently until warm.
  2. Add sugar and stir until dissolved.
  3. Sprinkle gelatin over the mixture and let sit for a few minutes, then stir until fully dissolved.
  4. In another bowl, combine coconut milk and vanilla extract.
  5. Mix the lime mixture into the coconut mixture until well combined.
  6. Pour the mixture into molds and freeze until set, about 120-180 minutes.
  7. For the gloss mirror finish, prepare a glaze and coat the bombs once set, then return to the refrigerator.
  8. Serve chilled, garnished with lime zest if desired.

Notes

For a stronger lime flavor, consider adding more lime juice. Use silicone molds for easy removal.
