- 1/2 cup fresh lime juice
- 1/4 cup water
- 1 cup coconut milk
- 1/2 cup sugar
- 1 tablespoon gelatin
- 1 teaspoon vanilla extract
- Optional: lime zest for garnish
Instructions
- In a saucepan, combine fresh lime juice and water. Heat gently until warm.
- Add sugar and stir until dissolved.
- Sprinkle gelatin over the mixture and let sit for a few minutes, then stir until fully dissolved.
- In another bowl, combine coconut milk and vanilla extract.
- Mix the lime mixture into the coconut mixture until well combined.
- Pour the mixture into molds and freeze until set, about 120-180 minutes.
- For the gloss mirror finish, prepare a glaze and coat the bombs once set, then return to the refrigerator.
- Serve chilled, garnished with lime zest if desired.
Notes
For a stronger lime flavor, consider adding more lime juice. Use silicone molds for easy removal.
