- 1 pork tenderloin
- 1 cup fresh spinach
- 4 oz cream cheese
- ½ cup feta cheese
- ½ cup sun-dried tomatoes
- 2 cloves minced garlic
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Kitchen twine
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, feta, sun-dried tomatoes, garlic, and Italian seasoning. Season with salt and pepper.
- Carefully butterfly the pork tenderloin and flatten it to an even thickness.
- Spread the stuffing evenly over the tenderloin.
- Roll the tenderloin tightly and secure it with kitchen twine.
- Heat olive oil in a skillet and sear the tenderloin on all sides until browned.
- Transfer the tenderloin to a baking dish and bake until the internal temperature reaches 145°F (63°C).
- Let the tenderloin rest for 5 minutes before slicing and serving.
Notes
