Description

An impressive and delicious holiday meal that features a tender pork tenderloin stuffed with creamy spinach, sun-dried tomatoes, and feta cheese.


Ingredients

  • 1 pork tenderloin
  • 1 cup fresh spinach
  • 4 oz cream cheese
  • ½ cup feta cheese
  • ½ cup sun-dried tomatoes
  • 2 cloves minced garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Kitchen twine

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix spinach, cream cheese, feta, sun-dried tomatoes, garlic, and Italian seasoning. Season with salt and pepper.
  3. Carefully butterfly the pork tenderloin and flatten it to an even thickness.
  4. Spread the stuffing evenly over the tenderloin.
  5. Roll the tenderloin tightly and secure it with kitchen twine.
  6. Heat olive oil in a skillet and sear the tenderloin on all sides until browned.
  7. Transfer the tenderloin to a baking dish and bake until the internal temperature reaches 145°F (63°C).
  8. Let the tenderloin rest for 5 minutes before slicing and serving.

Notes

Feel free to customize the stuffing with different cheeses or add nuts for crunch. Use a meat thermometer for best results.
