- 3 slices of bread (white or brown)
- 3 tsp butter
- ¼ cup eggless mayonnaise
- 1 tsp green chutney
- ½ capsicum (thinly sliced)
- 3 slices of cheese
- ¼ tsp pepper powder
- 3 tbsp cabbage (shredded)
- ½ carrot (grated)
- 1 tbsp tomato sauce
- Pinch of salt
Instructions
- Trim off the sides of the bread slices. You can use the sides to prepare bread crumbs.
- Flatten the bread slices using a rolling pin.
- Spread 3 tsp of butter over the bread slices and press them together to seal.
- Mix ¼ cup eggless mayonnaise with 1 tsp green chutney until well combined, then spread over the buttered bread.
- Add the sliced capsicum, followed by the cheese slices.
- Sprinkle with ¼ tsp pepper powder, add the shredded cabbage, and the grated carrot.
- Garnish with 1 tbsp of tomato sauce and a pinch of salt.
- Roll the bread tightly to keep all layers together and wrap it in cling wrap or aluminum foil.
- Refrigerate for 30 minutes or until set.
- Slice thickly and serve.
Notes
Store leftovers wrapped in cling wrap or in an airtight container in the fridge for up to three days.
