Description

A delightful and hearty dish that combines ground turkey, rice, and colorful bell peppers in one easy-to-make casserole.


Ingredients

  • 1 cup rice
  • 2 cups bell peppers, chopped
  • 1 pound ground turkey
  • 1 can diced tomatoes
  • 1 cup onion, chopped
  • 2 cups vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cheese for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground turkey and chopped onion in a large skillet over medium heat until browned.
  3. Stir in the chopped bell peppers, rice, diced tomatoes, vegetable broth, garlic powder, Italian seasoning, salt, and pepper.
  4. Bring to a simmer and cook for about 10 minutes until the rice is slightly tender.
  5. Transfer the mixture to a casserole dish.
  6. Top with cheese if desired.
  7. Cover with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  9. Let it cool slightly before serving.

Notes

Consider using different colored bell peppers for a vibrant dish. You can also make it vegetarian by adding beans or extra vegetables.
