- 1 pound chicken breast, sliced
- 2 jalapeños, sliced
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add minced garlic and ginger, and sauté for 1 minute.
- Add sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Add sliced jalapeños and red bell pepper, and stir-fry for another 3-4 minutes.
- Pour in soy sauce, and season with salt and pepper.
- Stir well to combine and cook for an additional 2 minutes.
- Serve hot over rice or noodles.
Notes
Adjust the spice level by using fewer jalapeños or removing the seeds. For extra nutrition, add other vegetables such as broccoli or snap peas.
