- 2 lbs baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste

Instructions
- Wash and halve the baby potatoes.
- In a bowl, mix olive oil, Parmesan cheese, garlic, oregano, salt, and pepper.
- Add the potatoes to the mixture and toss until well coated.
- Place the coated potatoes in the crockpot and cook on low for 240-300 minutes or until tender.
- Once done, garnish with fresh parsley before serving.
Notes
For a richer flavor, consider adding more garlic or using roasted garlic. Customize the herbs to your liking; rosemary or thyme work well too. For a crispy texture, broil the potatoes briefly after cooking.
