Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Layer the seared chicken in a baking dish, followed by roasted red peppers and fresh spinach.
- Top with mozzarella cheese.
- Cover the dish with foil and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove the foil and bake for another 5-10 minutes until the cheese is bubbly and golden.
