- 2 pounds baby potatoes
- 1/2 cup unsalted butter
- 1 head garlic
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and cut them in half.
- Melt the butter in a saucepan over medium heat and add the minced garlic cloves.
- Pour the melted garlic butter over the potatoes in a large bowl, and season with salt and pepper.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for about 25-30 minutes or until the potatoes are tender and golden.
- Remove from the oven and sprinkle grated Parmesan cheese on top.
- Return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
