- 2 ¼ cups all purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 ½ cups crinkle cut crushed potato chips (reserve ½ cup for the tops of the cookies)
- 2 cups semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set aside.
- Cream the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, about 3-5 minutes.
- Lower the mixer speed and add the vanilla extract. Then add the eggs one at a time, mixing just until incorporated.
- Gradually add the flour mixture to the butter mixture in three parts. Fold in the crushed potato chips and semisweet chocolate chips by hand.
- Using a 1 ½ tablespoon cookie scoop, drop scoops of dough onto the prepared baking sheet, spacing them evenly. Press reserved potato chip pieces onto the tops of each cookie.
- Bake for 11-12 minutes or until lightly browned around the edges.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
