Ingredients

  • 1 pound ground beef
  • 2 cups cheese tortellini
  • 1 can enchilada sauce
  • 1 cup shredded cheese (cheddar or a Mexican blend)
  • 1 cup diced tomatoes (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula.
  3. Drain excess fat if necessary.
  4. Stir in garlic powder, onion powder, salt, and pepper.
  5. Add the enchilada sauce, diced tomatoes (if using), and cheese tortellini.
  6. Bring to a simmer, cover the pot, and cook for 12-15 minutes or until tortellini is tender.
  7. Remove from heat and stir in the shredded cheese until melted.
