- 1 pound ground beef
- 2 cups cheese tortellini
- 1 can enchilada sauce
- 1 cup shredded cheese (cheddar or a Mexican blend)
- 1 cup diced tomatoes (optional)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spatula.
- Drain excess fat if necessary.
- Stir in garlic powder, onion powder, salt, and pepper.
- Add the enchilada sauce, diced tomatoes (if using), and cheese tortellini.
- Bring to a simmer, cover the pot, and cook for 12-15 minutes or until tortellini is tender.
- Remove from heat and stir in the shredded cheese until melted.
- Serve warm and enjoy your one-pot meal!
Notes
