- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened

- 1/2 teaspoon vanilla extract

- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Combine the all-purpose flour, powdered sugar, and softened butter in a mixing bowl. Mix them until crumbly.
- Press the mixture into the bottom of the muffin cups to form a crust.
- Whisk together the granulated sugar, eggs, lemon juice, lemon zest, salt, and baking powder until smooth in another bowl.
- Pour the lemon mixture over the crust in the muffin cups.
- Bake for 20-25 minutes, or until set and slightly golden.
- Allow the cookie cups to cool before gently removing them from the muffin tin.
- Dust with powdered sugar before serving.
