Description

Delightful treat with a mix of tartness and sweetness in bite-sized form, perfect for gatherings or a sweet snack.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the all-purpose flour, powdered sugar, and softened butter in a mixing bowl. Mix them until crumbly.
  3. Press the mixture into the bottom of the muffin cups to form a crust.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, salt, and baking powder until smooth in another bowl.
  5. Pour the lemon mixture over the crust in the muffin cups.
  6. Bake for 20-25 minutes, or until set and slightly golden.
  7. Allow the cookie cups to cool before gently removing them from the muffin tin.
  8. Dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. Great with tea or coffee. Store in an airtight container.
