Ingredients

  • 4 large eggs
  • 1 tablespoon olive oil
  • 1/2 cup bell peppers, diced (red, yellow, or green)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 1/4 cup red onion, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • Feta cheese, crumbled (for topping)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Dice the bell peppers, halve the cherry tomatoes, chop the spinach, and dice the red onion.
  2. In a non-stick skillet, heat the olive oil over medium heat.
  3. Add the diced bell peppers and red onion to the skillet. Sauté for about 2 minutes until they begin to soften.
  4. Stir in the cherry tomatoes and chopped spinach. Continue to sauté for an additional minute until the spinach wilts.
  5. In a bowl, whisk together the eggs, salt, black pepper, and paprika (if using).
  6. Pour the egg mixture over the sautéed vegetables in the skillet.
  7. Gently stir the eggs and vegetables together, cooking until the eggs are just set, about 1-2 minutes. Be careful not to overcook them.
  8. Remove from heat and top with crumbled feta cheese and chopped herbs.
