Mediterranean Veggie Scrambled Eggs: An Incredible 7-Minute Recipe

- 4 large eggs
- 1 tablespoon olive oil
- 1/2 cup bell peppers, diced (red, yellow, or green)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup spinach, chopped
- 1/4 cup red onion, diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Feta cheese, crumbled (for topping)
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Dice the bell peppers, halve the cherry tomatoes, chop the spinach, and dice the red onion.
- In a non-stick skillet, heat the olive oil over medium heat.
- Add the diced bell peppers and red onion to the skillet. Sauté for about 2 minutes until they begin to soften.
- Stir in the cherry tomatoes and chopped spinach. Continue to sauté for an additional minute until the spinach wilts.
- In a bowl, whisk together the eggs, salt, black pepper, and paprika (if using).
- Pour the egg mixture over the sautéed vegetables in the skillet.
- Gently stir the eggs and vegetables together, cooking until the eggs are just set, about 1-2 minutes. Be careful not to overcook them.
- Remove from heat and top with crumbled feta cheese and chopped herbs.

- If you want to boost the protein content, consider adding cooked chicken, turkey, or chickpeas to the scramble.
