- 4 chicken thighs (bone-in, skin-on)
- 1 small head of cabbage, chopped
- 4 medium potatoes, peeled and cubed
- 1 large onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set aside.
- In the same skillet, add the sliced onions. Sauté for 3-4 minutes until they begin to soften.
- Stir in the chopped cabbage and cubed potatoes. Season with salt and pepper. Cook for another 5 minutes, allowing the cabbage to wilt slightly.
- Nestle the seared chicken thighs on top of the cabbage and potatoes in the skillet.
- Transfer the skillet to the preheated oven. Roast for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
- Ensure that the chicken skin is crispy and the vegetables are cooked through. If necessary, broil for an additional 2-3 minutes to crisp up the skin.
- Remove the skillet from the oven and let it rest for 5 minutes before serving.
