Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 small head of cabbage, chopped
  • 4 medium potatoes, peeled and cubed
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the sliced onions. Sauté for 3-4 minutes until they begin to soften.
  5. Stir in the chopped cabbage and cubed potatoes. Season with salt and pepper. Cook for another 5 minutes, allowing the cabbage to wilt slightly.
  6. Nestle the seared chicken thighs on top of the cabbage and potatoes in the skillet.
  7. Transfer the skillet to the preheated oven. Roast for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  8. Ensure that the chicken skin is crispy and the vegetables are cooked through. If necessary, broil for an additional 2-3 minutes to crisp up the skin.
  9. Remove the skillet from the oven and let it rest for 5 minutes before serving.
