- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 teaspoon lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 1 vanilla bean (or 1 teaspoon vanilla extract)
- 3/4 cup granulated sugar (for the ice cream mixture)
- Pinch of salt
Instructions
- Combine the chopped strawberries, 1/2 cup sugar, and lemon juice in a bowl. Let it sit for about 30 minutes until they release their juices.
- Whisk together the heavy cream, milk, 3/4 cup sugar, and a pinch of salt in a separate bowl. If using, scrape the seeds from the vanilla bean and add them to the mixture.
- Blend the strawberry mixture into the cream mixture until well combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the ice cream to a lidded container and freeze for at least 240 minutes, or until firm.
- Serve and enjoy your homemade strawberry vanilla bean ice cream!
Notes
Use ripe strawberries for the best flavor. If you don’t have an ice cream maker, you can mix and freeze the ingredients, stirring every 30 minutes until desired consistency.
