French Onion Chicken Rice

Description

A comforting dish combining tender chicken, caramelized onions, and hearty rice, inspired by classic French onion soup.


Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pound boneless chicken thighs
  • 1 large onion, sliced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the sliced onions and cook until caramelized, about 10-15 minutes.
  3. Season the chicken thighs with salt, pepper, garlic powder, and thyme.
  4. Push the onions to the side of the skillet and add the chicken, browning it on both sides.
  5. Add the rice and chicken broth to the skillet.
  6. Bring it to a boil, then reduce the heat to low.
  7. Cover and simmer for 20-25 minutes or until the rice is cooked.
  8. Remove from heat, sprinkle with Swiss cheese, cover again, and let sit for a few minutes until the cheese is melted.
  9. Serve warm.

Notes

For extra creaminess, mix in a tablespoon of cream or sour cream when adding the cheese. Caramelizing the onions slowly maximizes flavor.
