- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound boneless chicken thighs
- 1 large onion, sliced
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 cup shredded Swiss cheese
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the sliced onions and cook until caramelized, about 10-15 minutes.
- Season the chicken thighs with salt, pepper, garlic powder, and thyme.
- Push the onions to the side of the skillet and add the chicken, browning it on both sides.
- Add the rice and chicken broth to the skillet.
- Bring it to a boil, then reduce the heat to low.
- Cover and simmer for 20-25 minutes or until the rice is cooked.
- Remove from heat, sprinkle with Swiss cheese, cover again, and let sit for a few minutes until the cheese is melted.
- Serve warm.
Notes
For extra creaminess, mix in a tablespoon of cream or sour cream when adding the cheese. Caramelizing the onions slowly maximizes flavor.
