- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound boneless chicken thighs
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (such as Swiss or Gruyere)
Instructions
- Melt butter in a large skillet over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
- Season chicken thighs with salt, pepper, and garlic powder. Push the onions to one side of the skillet, and Add the chicken to the other side. Sear the chicken until golden brown, about 4-5 minutes per side.
- Stir in the rice, then pour in the chicken broth. Bring to a boil, cover, and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat, sprinkle with shredded cheese, cover, and let sit for a few minutes until cheese is melted.
- Fluff rice with a fork and serve.
Notes
For added flavor, consider adding fresh thyme or a splash of balsamic vinegar while caramelizing the onions. Topping with crispy fried onions adds a nice crunch.
