  • 4 English muffins, split in half
  • 1 cup pizza sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup cooked breakfast sausage, crumbled
  • ½ cup diced bell peppers (any color)
  • ½ cup sliced mushrooms
  • ¼ cup chopped green onions
  • Salt and pepper to taste
  • Olive oil or cooking spray (for toasting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the split English muffins on a baking sheet, cut-side up. Lightly brush the tops with olive oil or spray with cooking spray.
  3. Bake the English muffins in the preheated oven for about 5-7 minutes, until they are lightly toasted.
