- 4 English muffins, split in half
- 1 cup pizza sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1 cup cooked breakfast sausage, crumbled
- ½ cup diced bell peppers (any color)
- ½ cup sliced mushrooms
- ¼ cup chopped green onions
- Salt and pepper to taste
- Olive oil or cooking spray (for toasting)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the split English muffins on a baking sheet, cut-side up. Lightly brush the tops with olive oil or spray with cooking spray.
- Bake the English muffins in the preheated oven for about 5-7 minutes, until they are lightly toasted.
- Remove the muffins from the oven and spoon a generous amount of pizza sauce onto each half.
- Top the sauce with shredded mozzarella cheese, covering each muffin evenly.
- Distribute the cooked sausage, diced bell peppers, and sliced mushrooms over the cheese.
- In a skillet, fry the eggs sunny-side up or scrambled, seasoning with salt and pepper to taste.
- Place one cooked egg on top of each muffin half.
- Return the assembled muffins to the oven and bake for an additional 5-8 minutes or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with chopped green onions for added freshness.
