Ingredients

  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup blueberries
  • 1 egg
  • 1/2 cup heavy cream
  • Zest of 1 lemon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix together flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Fold in blueberries, lemon zest, and lemon juice.
  5. Whisk together the egg and heavy cream in another bowl. Add to the flour mixture and stir until just combined.
  6. Turn the dough onto a floured surface and knead gently a few times. Pat into a circle about 1 inch thick.
  7. Cut into wedges and place on the prepared baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
  9. Allow to cool slightly before serving. Enjoy!
