- 1 tablespoon baking powder

- 1/2 cup unsalted butter, chilled and cubed
- 1 cup blueberries
- 1 egg
- 1/2 cup heavy cream
- Zest of 1 lemon
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix together flour, sugar, baking powder, and salt in a large bowl.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Fold in blueberries, lemon zest, and lemon juice.
- Whisk together the egg and heavy cream in another bowl. Add to the flour mixture and stir until just combined.
- Turn the dough onto a floured surface and knead gently a few times. Pat into a circle about 1 inch thick.
- Cut into wedges and place on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving. Enjoy!

For best flavor, use fresh blueberries. Chill the butter to create a flaky texture.
