Crock Pot Bourbon Chicken is a flavorful dish made with tender chicken thighs, bourbon, and a rich sauce, served over rice.

- 2 pounds boneless, skinless chicken thighs
- 1 cup bourbon (or substitute with chicken broth for a non-alcoholic version)
- ½ cup soy sauce
- ½ cup brown sugar
- ¼ cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon black pepper
- 1 cup chicken broth
- 2 cups uncooked white rice
- 4 cups water
- ½ cup chopped green onions (for garnish)
Instructions
- Trim any excess fat from the chicken thighs and place them in the bottom of the slow cooker.
- In a separate bowl, whisk together the bourbon, soy sauce, brown sugar, ketchup, minced garlic, minced ginger, and black pepper until well combined.
- Pour the sauce over the chicken in the slow cooker, ensuring the chicken is well coated.
- Cover the slow cooker and set it to low for 4-6 hours or high for 2-3 hours. The chicken should be tender and easily shredded.
- About 30 minutes before serving, combine the uncooked rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and water is absorbed.
- Once the cooking time is complete, carefully remove the chicken from the slow cooker. Use two forks to shred the chicken into bite-sized pieces.
- Return the shredded chicken to the slow cooker, stirring it into the sauce. Serve the chicken over a bed of fluffy rice.
- Sprinkle chopped green onions on top for a fresh finish.
