- 1 cup whipped ricotta

Instructions
- In a bowl, combine the grated sweet potato, eggs, flour, salt, and pepper. Mix well.
- Heat oil in a skillet over medium heat.
- Once hot, drop spoonfuls of the mixture into the skillet, flattening them slightly.
- Fry until golden and crispy on both sides.
- Remove and drain on paper towels.
- Serve warm topped with whipped ricotta, a drizzle of honey, and a sprinkle of chopped pistachios.
