Description

Ingredients

  • 2 cups (300 g) grated sweet potato
  • 2 eggs
  • 1/4 cup (30 g) flour
  • Salt and pepper to taste
  • Oil for frying
  • 1 cup whipped ricotta
  • Honey for drizzling
  • Pistachios, chopped for crunch

Instructions

  1. In a bowl, combine the grated sweet potato, eggs, flour, salt, and pepper. Mix well.
  2. Heat oil in a skillet over medium heat.
  3. Once hot, drop spoonfuls of the mixture into the skillet, flattening them slightly.
  4. Fry until golden and crispy on both sides.
  5. Remove and drain on paper towels.
  6. Serve warm topped with whipped ricotta, a drizzle of honey, and a sprinkle of chopped pistachios.
