- 1 1/2 to 2 cups uncooked orzo
- 2 cups cooked chicken, shredded or diced
- 3 cups warm chicken broth
- 1 cup heavy cream
- 1 lemon (zested and juiced)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine uncooked orzo, shredded chicken, chicken broth, heavy cream, lemon juice, garlic powder, salt, and pepper.
- Mix well and transfer to a greased baking dish.
- Cover with foil and bake for 20 minutes.
- Remove the foil, stir, and bake for another 10-15 minutes or until the orzo is cooked and the mixture is creamy.
- Garnish with lemon zest and fresh parsley before serving.
Notes
For best results, use freshly squeezed lemon juice. Add vegetables like spinach or peas for extra nutrients.
