Ingredients

  • 1 1/2 to 2 cups uncooked orzo
  • 2 cups cooked chicken, shredded or diced
  • 3 cups warm chicken broth
  • 1 cup heavy cream
  • 1 lemon (zested and juiced)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine uncooked orzo, shredded chicken, chicken broth, heavy cream, lemon juice, garlic powder, salt, and pepper.
  3. Mix well and transfer to a greased baking dish.
  4. Cover with foil and bake for 20 minutes.
  5. Remove the foil, stir, and bake for another 10-15 minutes or until the orzo is cooked and the mixture is creamy.
  6. Garnish with lemon zest and fresh parsley before serving.

Notes

For best results, use freshly squeezed lemon juice. Add vegetables like spinach or peas for extra nutrients.
