Description

An elegant and easy recipe for Cranberry Brie Stuffed Chicken that turns ordinary chicken into a game-changing dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 ounces brie cheese, sliced
  • 1 cup cranberry sauce
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., thyme or sage)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay out chicken breasts and cut a pocket into each, being careful not to slice all the way through.
  3. Stuff each pocket with cranberry sauce and brie slices, and season the outside with salt and pepper.
  4. Heat olive oil in a skillet and sear each chicken breast on both sides until golden brown (about 3–4 minutes per side).
  5. Transfer the seared chicken to a baking dish, sprinkle breadcrumbs on top, and bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5–10 minutes before serving, garnished with fresh herbs if desired.

Notes

Use room-temperature brie for easier stuffing and ensure to rest the chicken after cooking for the best texture.
