- 8 ounces brie cheese, sliced
- 1 cup cranberry sauce
- 1 cup breadcrumbs
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 375°F (190°C).
- Lay out chicken breasts and cut a pocket into each, being careful not to slice all the way through.
- Stuff each pocket with cranberry sauce and brie slices, and season the outside with salt and pepper.
- Heat olive oil in a skillet and sear each chicken breast on both sides until golden brown (about 3–4 minutes per side).
- Transfer the seared chicken to a baking dish, sprinkle breadcrumbs on top, and bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5–10 minutes before serving, garnished with fresh herbs if desired.
