Description

A fun and hearty salad packed with protein and colorful vegetables, perfect for picnics and potlucks.


Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup ranch dressing
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it.
  3. In a large bowl, combine the cooled pasta, turkey bacon, diced chicken ham, cherry tomatoes, black beans, corn, red onion, and bell pepper.
  4. Pour the ranch dressing over the salad and toss to combine evenly.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Great served cold or at room temperature. Can be made ahead of time as it tastes better the next day.
