Description

A flavorful dish that brings the taste of Popeye’s right into your kitchen with buttery red beans served over fluffy rice.


Ingredients

  • 1 cup dried red beans
  • 4 cups water
  • 1 tablespoon olive oil

Instructions

  1. Rinse the dried red beans and soak them overnight in water.
  2. Drain the beans and place them in a pot. Add 4 cups of water and bring to a boil.
  3. Reduce heat and simmer for about 60 minutes or until the beans are tender.
  4. In a separate pan, heat the olive oil over medium heat.
  5. Once hot, add the cooked beans to the pan, and season as desired (salt, pepper, and spices). Stir well to combine.
  6. Serve with rice.

Notes

For a complete meal, pair with cornbread and top with chopped green onions or parsley.
