- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, peeled and sliced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a mixing bowl, beat the cream cheese and sugar until creamy. Add the eggs and vanilla, mixing until smooth.
- Pour the cheesecake mixture over the crust in the baking dish.
- In another bowl, combine sliced peaches, brown sugar, cinnamon, and lemon juice. Spread the peach mixture over the cheesecake layer.
- Bake for 30-35 minutes, or until set.
- Let cool, then refrigerate before cutting into bars. Serve chilled.
Notes
For best flavor, use fresh peaches, and store covered in the refrigerator for up to five days.
