Description

Delightful dessert combining creamy cheesecake with sweet peach topping in a graham cracker crust, perfect for summer gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  3. In a mixing bowl, beat the cream cheese and sugar until creamy. Add the eggs and vanilla, mixing until smooth.
  4. Pour the cheesecake mixture over the crust in the baking dish.
  5. In another bowl, combine sliced peaches, brown sugar, cinnamon, and lemon juice. Spread the peach mixture over the cheesecake layer.
  6. Bake for 30-35 minutes, or until set.
  7. Let cool, then refrigerate before cutting into bars. Serve chilled.

Notes

For best flavor, use fresh peaches, and store covered in the refrigerator for up to five days.
