Description

A refreshing cold soup made with tomatoes and fresh vegetables, perfect for hot days.


Ingredients

  • 1 can Healthy Request Tomato Soup
  • 2 Cucumbers, chopped
  • 2 Bell Peppers, chopped
  • 1 Red Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Vinegar
  • Salt, to taste
  • Pepper, to taste
  • Crostini for topping

Instructions

  1. Combine the Healthy Request Tomato Soup with chopped cucumbers, bell peppers, red onions, and minced garlic in a large bowl.
  2. Drizzle with olive oil and vinegar, and season with salt and pepper to taste.
  3. Blend the mixture until smooth or leave it chunky, based on your preference.
  4. Cover and chill in the refrigerator for at least an hour to allow the flavors to develop.
  5. Serve chilled, topped with crispy crostini.
