- Crostini for topping
Instructions
- Combine the Healthy Request Tomato Soup with chopped cucumbers, bell peppers, red onions, and minced garlic in a large bowl.
- Drizzle with olive oil and vinegar, and season with salt and pepper to taste.
- Blend the mixture until smooth or leave it chunky, based on your preference.
- Cover and chill in the refrigerator for at least an hour to allow the flavors to develop.
- Serve chilled, topped with crispy crostini.
