Description

A comforting chicken pot pie with tender chicken, crispy turkey bacon, and colorful vegetables, all wrapped in a flaky crust.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup turkey bacon, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add flour and stir for about 2 minutes. Slowly add chicken broth, whisking constantly until thickened.
  3. Stir in the chicken, turkey bacon, mixed vegetables, onion powder, garlic powder, salt, and pepper.
  4. Pour the mixture into a pie crust in a pie dish.
  5. Cover with the top pie crust, sealing the edges, and make a few slits for steam to escape.
  6. Bake for 30-35 minutes or until the crust is golden brown. Let it cool for 10 minutes before serving.

Notes

For a thicker filling, let the sauce simmer longer before adding chicken and vegetables. Feel free to customize with other vegetables.
