Homemade Chicken Marinade for the Grill makes chicken breasts juicy, tender, and packed with herby-garlic flavor.
Ingredients

- 1¾ lbs (about 800 g) boneless, skinless chicken breasts
- 6 tablespoons extra virgin olive oil
- 4 large garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- 1¼ teaspoons kosher salt
- ½ teaspoon freshly ground black pepper
- 1½ teaspoons lemon zest (from 1 lemon)
Instructions
- Place chicken breasts in a zip-top bag and pound to an even ½-inch thickness for even cooking.
- In a bowl (or directly in the bag), mix olive oil, garlic, thyme, oregano, salt, pepper, and lemon zest until combined.
- Add chicken to the marinade, seal, and massage to coat. Refrigerate at least 4 hours (best overnight).
- Heat grill or grill pan to high. Oil grates/pan to prevent sticking.
- Grill chicken 2–3 minutes per side for grill marks, then continue until the thickest part reaches 165°F (74°C). (If it sticks, wait 30 seconds—then it should release.)
- Remove and rest 3–4 minutes before slicing to keep it juicy.
