- 1 lb boneless (skinless chicken breasts or thighs, cut into bite-size pieces)
- 1 tablespoon olive oil or butter

- Black pepper (to taste)
- ½ teaspoon garlic powder (optional)
- 8 to 12 oz egg noodles
- 4 tablespoons butter
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ cup grated Parmesan cheese (optional)
- Chopped parsley (optional garnish)
Instructions
- Bring a large pot of salted water to a boil.
- Cook egg noodles until tender according to package instructions, then drain and set aside.
- Heat olive oil or butter in a large skillet over medium heat.
- Add chicken pieces, season with salt, pepper, and garlic powder if using.
- Cook the chicken 6 to 8 minutes, stirring occasionally, until golden and cooked through. Remove from heat.
- Return cooked noodles to the pot or skillet and add butter. Stir until butter melts and noodles are evenly coated.
- Season noodles with salt and pepper.
- Add cooked chicken to the buttered noodles and toss gently to combine and warm through.
- Serve hot topped with grated Parmesan cheese and chopped parsley if desired.
