Description

Transform leftover mashed potatoes into crispy, cheesy bites that are perfect for parties or as a kid-friendly snack!


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • Cooking spray or oil

Instructions

  1. In a bowl, combine chilled mashed potatoes, mozzarella, Parmesan, egg, garlic powder, onion powder, salt, and pepper until smooth.
  2. Take a spoonful of the mixture and roll into balls (about 1-2 tablespoons each).
  3. Roll each ball in panko breadcrumbs until well-coated.
  4. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  5. Arrange the potato balls in a single layer in the air fryer basket, leaving space between them.
  6. Cook for 10-12 minutes, flipping halfway, until golden brown and crispy.
  7. Remove from the air fryer, let rest for a few minutes, and serve with your favorite dipping sauce.
