- 1 1/2 tsp cornstarch
- 1/2 cup cold water
- 1 1/2 cups fresh or frozen blueberries
- 2 tsp lemon juice
- 12 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg
- 1 egg white
- 1 tsp vanilla extract
- 1/2 Tbsp lemon juice
- 1 cup white chocolate chips
- 1/4 cup heavy whipping cream
Instructions
- Preheat oven to 325°F (160°C).
- In a small saucepan, whisk together 1 Tbsp sugar and cornstarch. Stir in cold water, blueberries, and 2 tsp lemon juice. Cook over medium heat, whisking often, until mixture begins to boil lightly. Boil for 30 seconds, whisking constantly. Remove from heat and strain through a fine-mesh strainer to remove skins; set aside.
- In a large mixing bowl, beat cream cheese and 1/3 cup sugar until fluffy. Mix in egg and egg white. Add vanilla extract and 1/2 Tbsp lemon juice.
- Combine white chocolate chips and heavy cream in a microwave-safe bowl. Microwave on 50% power in 30-second intervals, stirring after each, until melted and smooth.
- Add melted chocolate mixture to cream cheese mixture and blend until smooth.
- Pour cream cheese mixture into graham cracker crust.
- Bake for 50 minutes or until the center is almost set.
- Cool completely, then top with blueberry sauce before serving.

- For best results, use fresh blueberries and allow the cheesecake to cool completely before adding the blueberry topping.
