- 240 g all purpose / plain flour
- 2 tablespoons caster sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 220 g dairy-free block butter
- Ice-water
- 120 g chopped apples
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground all spice
- 1/4 teaspoon ground nutmeg
- 30 g caster sugar
- 2 teaspoons cornflour / cornstarch
- 1 juice lemon
- 100 g powdered / icing sugar
- 1 tablespoon dairy-free milk
- 1/4 teaspoon ground cinnamon
- Red food gel
Instructions
- In a medium-sized mixing bowl, sift together the all-purpose flour, caster sugar, and ground spices until well combined.
- Add the cold, cubed dairy-free butter to the flour mixture. Use your fingers or a pastry cutter to mix until it resembles sand.
- Gradually pour in ice water, 1/2 tablespoon at a time, mixing until the dough comes together.
- Wrap the dough in greaseproof paper and place it in the fridge for 30 minutes.
- In a saucepan, combine diced apples, spices, sugars, cornflour, and lemon juice. Cook over low to medium heat, stirring constantly, until thickened.
- Remove your filling from the heat and let it cool for about 5 minutes.
- Preheat your oven to 180°C and line two baking trays with greaseproof paper.
- Roll out the dough between two sheets of floured greaseproof paper until it forms a large rectangle.
- Use an apple-shaped cookie cutter to cut out shapes and place them on the lined trays.
- Spoon a teaspoon of the cooled apple filling onto the center of half of your pastry shapes. Brush the edges with dairy-free milk.
- Place another pastry over the filling, pressing down the edges to stick together.
- Brush the tops of your pop tarts with dairy-free milk and bake for about 15 minutes until golden brown.
- In a bowl, whisk together powdered sugar, dairy-free milk, ground cinnamon, and red food gel until smooth.
- Drizzle the glaze over the warm pop tarts and allow it to set.
