Tuscan Garlic Chicken Pita Pizzas are a delicious and easy recipe that combines tender chicken with fresh toppings on whole wheat pitas.

- 2 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 4 whole wheat pita breads
- 1 cup shredded mozzarella cheese
- 1 cup cherry tomatoes, halved
- ½ cup spinach leaves, chopped
- ¼ cup feta cheese, crumbled
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the chicken breasts with 2 tablespoons of olive oil, minced garlic, oregano, basil, salt, and pepper. Make sure the chicken is well-coated.
- Heat a skillet over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
- Place the whole wheat pita breads on a baking sheet.
- Drizzle the remaining olive oil onto each pita. Evenly distribute the sliced chicken, cherry tomatoes, and spinach over the pitas. Top with shredded mozzarella and crumbled feta cheese.
- Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is bubbly and the edges of the pita are crispy.
- Once out of the oven, add fresh basil leaves for a burst of color and flavor.
- Cut the pita pizzas into wedges and serve warm.

- Feel free to add other vegetables as toppings.

- Store leftovers in the refrigerator for up to 2 days.
