Description

Tuscan Garlic Chicken Pita Pizzas are a delicious and easy recipe that combines tender chicken with fresh toppings on whole wheat pitas.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 4 whole wheat pita breads
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • ½ cup spinach leaves, chopped
  • ¼ cup feta cheese, crumbled
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the chicken breasts with 2 tablespoons of olive oil, minced garlic, oregano, basil, salt, and pepper. Make sure the chicken is well-coated.
  3. Heat a skillet over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
  4. Place the whole wheat pita breads on a baking sheet.
  5. Drizzle the remaining olive oil onto each pita. Evenly distribute the sliced chicken, cherry tomatoes, and spinach over the pitas. Top with shredded mozzarella and crumbled feta cheese.
  6. Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is bubbly and the edges of the pita are crispy.
  7. Once out of the oven, add fresh basil leaves for a burst of color and flavor.
  8. Cut the pita pizzas into wedges and serve warm.
