- 1 bell pepper, sliced
- 1 cup broccoli florets
- Cooked rice or noodles, for serving

Instructions
- Cut the chicken breasts into bite-sized pieces.
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Add the chicken pieces to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Stir in the minced garlic and grated ginger. Sauté for an additional minute until fragrant.
- In a small bowl, mix the sweet chili sauce, soy sauce, rice vinegar, and red pepper flakes if using. Pour this mixture over the chicken in the skillet.
- Toss in the sliced bell pepper and broccoli florets. Stir well to coat everything in the sauce.
