- 180 ml (3/4 cup) heavy cream
- 30 g (2 tbsp) unsalted butter
- 40 g (1/2 cup) freeze-dried strawberries, powdered

- Use a small scoop to portion the ganache into 24 mounds on a parchment-lined baking sheet and chill for 10-15 minutes.
- Roll each portion into balls and coat in cocoa powder or crushed freeze-dried strawberry powder.
- Chill the finished truffles for 10-15 minutes to set the coating, then transfer to an airtight container.
Notes
For best results, ensure not to overheat chocolate or cream to avoid graininess. Use a digital scale for accurate measurements.
