Delicious Strawberry Cream Scones Recipe for a Perfect Treat


Ingredients

Scale
  • 2 1/2 cups (300g) all-purpose flour
  • 1/2 cup (99g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 4 ounces (113g) cream cheese, cold and cut into chunks
  • 3/4 cup (180ml) heavy cream, plus more for brushing
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 cup (150g) fresh strawberries, chopped into small pieces
  • Optional: Coarse sugar or cream glaze for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold cubed butter and cold cream cheese chunks. Cut in with a pastry cutter (or hands) until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk egg, vanilla, and heavy cream.
  5. Pour wet ingredients into dry and stir gently just until combined (do not overmix).
  6. Gently fold in chopped strawberries.
  7. Turn dough onto a floured surface. Shape into a 1-inch thick disc and cut into 8 wedges.
  8. Place wedges on baking sheet. Brush tops with heavy cream and sprinkle coarse sugar (optional).
  9. Bake 18–22 minutes, until golden brown.
  10. Cool slightly, then transfer to a rack. Serve warm or at room temperature.
