- 2 1/2 cups (300g) all-purpose flour
- 1/2 cup (99g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 4 ounces (113g) cream cheese, cold and cut into chunks
- 3/4 cup (180ml) heavy cream, plus more for brushing
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 cup (150g) fresh strawberries, chopped into small pieces
- Optional: Coarse sugar or cream glaze for topping
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add cold cubed butter and cold cream cheese chunks. Cut in with a pastry cutter (or hands) until mixture resembles coarse crumbs.
- In a separate bowl, whisk egg, vanilla, and heavy cream.
- Pour wet ingredients into dry and stir gently just until combined (do not overmix).
- Gently fold in chopped strawberries.
- Turn dough onto a floured surface. Shape into a 1-inch thick disc and cut into 8 wedges.
- Place wedges on baking sheet. Brush tops with heavy cream and sprinkle coarse sugar (optional).
- Bake 18–22 minutes, until golden brown.
- Cool slightly, then transfer to a rack. Serve warm or at room temperature.
