Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 handful of spinach (about 1 cup chopped)

Instructions

  1. Wash and finely chop about one cup of fresh spinach leaves.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat the egg, then add milk and melted butter.
  4. Pour wet ingredients into dry ingredients and stir gently. Fold in chopped spinach.
  5. Warm a non-stick skillet over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes, then flip and cook another 1-2 minutes.
  7. Transfer cooked pancakes to a serving plate and serve immediately with your favorite toppings.
