- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 handful of spinach (about 1 cup chopped)
Instructions
- Wash and finely chop about one cup of fresh spinach leaves.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg, then add milk and melted butter.
- Pour wet ingredients into dry ingredients and stir gently. Fold in chopped spinach.
- Warm a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes, then flip and cook another 1-2 minutes.
- Transfer cooked pancakes to a serving plate and serve immediately with your favorite toppings.
Notes
- These pancakes are great with syrup, fresh fruit, or yogurt.
