Ingredients

  • 2 tablespoons Avocado or Olive Oil
  • 1 small Yellow Onion
  • 1 pound Ground Chicken
  • 2 large Eggs
  • 3/4 cup Shredded Mozzarella Cheese
  • 1/2 cup Crumbled Feta Cheese
  • 2 cups Baby Spinach
  • 1 cup Almond Flour
  • 1/2 cup Coconut Flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Baking Powder

Instructions

  1. Preheat oven: Set your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
  2. Sauté onion: In a skillet, heat the oil over medium heat and add the diced onion. Sauté for about 5 minutes, until the onion becomes soft and fragrant.
  3. Cook chicken: Add the ground chicken to the skillet and cook until it’s no longer pink, around 10 minutes. Once done, let the mixture cool slightly.
  4. Whisk eggs: In a large bowl, whisk the eggs until combined. Then gently fold in the shredded mozzarella, crumbled feta, and baby spinach.
  5. Combine mixtures: Pour the cooked chicken mixture into the bowl with the egg and cheese blend. Mix until everything is well incorporated.
  6. Add dry ingredients: Sprinkle in the almond flour, coconut flour, baking powder, garlic powder, salt, and pepper. Gently mix until everything is just combined.
  7. Shape biscuits: Using a scoop, form large balls of the mixture and place them on the prepared baking sheet. Shape each into a biscuit form.
  8. Top with cheese: Sprinkle the remaining mozzarella cheese over the shaped biscuits.
  9. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes.
  10. Cool and store: Once done, let the biscuits cool on the tray for a bit before transferring them to an airtight container.
