  • 1 teaspoon GoChuGaru (omit for a milder broth)
  • 1 tablespoon Rice Vinegar (lime juice can be alternative)
  • 300 grams Beef (Ribeye or Sirloin) (or substitute with grilled mushrooms, tofu, or tempeh)
  • 1/2 cup Mayonnaise (Greek yogurt is a lighter option)
  • 2 tablespoons Sriracha (add more for extra spice)
  • 1 teaspoon Garlic Powder (fresh garlic can also be used)
  • 1 teaspoon Sugar (white sugar works as well)
  • 2 tablespoons Green Onions (for freshness)
  • 1 tablespoons Black Sesame Seeds (for crunch)

Instructions

  1. Marinate Beef: Slice ribeye or sirloin into strips. Combine with soy sauce, gochujang, sesame oil, brown sugar, minced garlic, and black pepper. Let it sit for at least 30 minutes for optimal flavor.
  2. Mix Creamy Sauce: In a bowl, whisk together mayonnaise, sriracha, sesame oil, garlic powder, and sugar until smooth. Chill it in the refrigerator while you prepare the rest.
  3. Prepare Broth: In a medium pot, bring broth to a gentle simmer. Stir in gochugaru, soy sauce, rice vinegar, sesame oil, and a pinch of salt to enhance flavor.
  4. Cook Noodles: Add ramen noodles to the simmering broth, cooking until al dente, about 3 minutes. Be careful not to overcook them, as they should remain springy.
  5. Grill Beef: Preheat a grill pan or skillet over high heat. Sear the marinated beef for 2–3 minutes on each side until it’s nicely charred. Allow it to rest before slicing thinly.
  6. Assemble Bowls: Divide the cooked noodles into bowls, ladle the hot broth over them, and top generously with creamy sauce, sliced beef, green onions, and a sprinkle of black sesame seeds. For an extra kick, drizzle with chili oil or add more gochugaru.
