- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 cans (28 oz each) San Marzano tomatoes
- 1–2 tsp red pepper flakes (to taste)
- 12 oz spaghetti or linguine
- 2 tbsp olive oil
- ¼ cup fresh basil, chopped
- ½ cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown on both sides (6-8 mins). Remove and let rest.
- In the same skillet, sauté minced garlic until fragrant (1 min). Add San Marzano tomatoes and red pepper flakes; simmer for 15 minutes.
- Cook pasta in salted water until al dente; drain and reserve some pasta water.
- Slice chicken and return it to the sauce along with the cooked pasta. Mix well, adding reserved pasta water for desired consistency.
- Stir in chopped basil before serving and top with grated Parmesan.
