- 1 lb shrimp, peeled and deveined
- 1 lb smoked sausage, sliced
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes with green chilies
- 2 bay leaves
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup okra, sliced (optional)
- 1/4 cup green onions, chopped (for garnish)
- Cooked rice (for serving)
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Gradually whisk in the flour, stirring constantly until the mixture turns a deep brown color, about 20-30 minutes.
- Add the chopped onion, bell pepper, and celery to the pot. Stir and cook for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Gradually add the chicken broth while stirring to avoid lumps.
- Stir in the diced tomatoes, bay leaves, Cajun seasoning, thyme, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low and let the gumbo simmer for about 30 minutes. Stir occasionally.
- Add the sliced smoked sausage to the pot. Let it cook for an additional 10 minutes.
- Add the shrimp and okra (if using) to the gumbo and cook for about 5-7 minutes until the shrimp are pink and cooked through.
- Carefully remove the bay leaves before serving.
- Taste and adjust any seasonings as necessary.
