  • 1 lb smoked sausage, sliced
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 onion, chopped

  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 bay leaves
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup okra, sliced (optional)
  • 1/4 cup green onions, chopped (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Gradually whisk in the flour, stirring constantly until the mixture turns a deep brown color, about 20-30 minutes.
  3. Add the chopped onion, bell pepper, and celery to the pot. Stir and cook for about 5 minutes until the vegetables are softened.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Gradually add the chicken broth while stirring to avoid lumps.
  6. Stir in the diced tomatoes, bay leaves, Cajun seasoning, thyme, salt, and pepper. Bring the mixture to a boil.
  7. Reduce the heat to low and let the gumbo simmer for about 30 minutes. Stir occasionally.
  8. Add the sliced smoked sausage to the pot. Let it cook for an additional 10 minutes.
  9. Add the shrimp and okra (if using) to the gumbo and cook for about 5-7 minutes until the shrimp are pink and cooked through.
  10. Carefully remove the bay leaves before serving.
  11. Taste and adjust any seasonings as necessary.
