Description

Shortbread Cookies are rich, buttery, and perfectly tender. Crisp on the edges and melt-in-your-mouth soft inside, these cookies are the ultimate treat for Christmas baking, gifting, or enjoying with a cup of tea.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • Optional: Powdered sugar for dusting or melted chocolate for drizzling

Instructions

  1. In a mixing bowl, cream together the butter and sugar until light and fluffy. Mix in vanilla extract, then gradually add flour and salt until a smooth dough forms.
  2. Roll dough into a log and slice into rounds, or press into a baking pan for traditional shortbread. You can also cut out festive shapes using cookie cutters.
  3. Preheat oven to 325°F (165°C). Arrange cookies on a parchment-lined baking sheet and bake for 12–15 minutes, until edges are lightly golden.
  4. Let cookies cool for 5 minutes, then transfer to a wire rack. Dust with powdered sugar or drizzle with melted chocolate if desired.
