  • 34 lb beef chuck roast
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, cut into chunks
  • 2 bay leaves
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp Worcestershire sauce

Instructions

  1. Set your Instant Pot to the sauté function. Add oil and sear the beef chuck roast on all sides until nicely browned, about 4 minutes per side.
  2. Remove the roast and add the chopped onion and minced garlic to the pot. Cook until fragrant and slightly translucent, about 3 minutes. Scrape up any browned bits from the bottom.
  3. Return the seared beef to the pot along with any accumulated juices. Add the carrot slices, potato chunks, bay leaves, thyme, Worcestershire sauce, and pour in the beef broth until everything is submerged.
  4. Secure the lid on your Instant Pot and set it to high pressure for 60 minutes.
  5. Once cooking time ends, allow for natural pressure release for about 15 minutes before manually releasing any remaining steam.
  6. Carefully remove the roast from the pot. Let it rest for a few minutes before slicing or shredding. Serve over mashed potatoes or rice, spooning some of the pot liquid over the top.

  • For best results, allow the beef to rest after cooking for at least 10 minutes to retain moisture.
  • Don’t skip the deglazing step; the browned bits at the bottom of the pot add significant flavor.
