- 4 cups cubed stale bread (preferably a rustic loaf)
- 2 cups sliced mushrooms (such as cremini or button)
- 1 cup grated Gruyere cheese
- 4 large eggs
- 2 cups milk
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil or butter
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the sliced mushrooms and garlic, cooking until the mushrooms are tender and any moisture has evaporated, about 7-10 minutes. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.
- In a large bowl, combine the cubed stale bread with the sautéed mushroom mixture and half of the grated Gruyere cheese. Toss gently to combine.
- In another bowl, whisk together the eggs, milk, and heavy cream until smooth. Season with additional salt and pepper if desired.
- Pour the egg mixture over the bread and mushroom mixture. Gently stir to ensure that all the bread is soaked in the custard.
- Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining Gruyere cheese.
- Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the custard is set.
- Once baked, remove from the oven and let it cool for about 10 minutes before serving.
- If desired, sprinkle fresh parsley on top for a pop of color and flavor.
Notes
- Use day-old bread for better texture.
- Feel free to add other vegetables or proteins as desired.
- This dish can be made ahead of time and baked just before serving.
