Description

Savory Bread Pudding with Mushrooms and Gruyere Cheese is a hearty dish that combines rich flavors and textures.


Ingredients

  • 4 cups cubed stale bread (preferably a rustic loaf)
  • 2 cups sliced mushrooms (such as cremini or button)
  • 1 cup grated Gruyere cheese
  • 4 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil or butter
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the sliced mushrooms and garlic, cooking until the mushrooms are tender and any moisture has evaporated, about 7-10 minutes. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.
  3. In a large bowl, combine the cubed stale bread with the sautéed mushroom mixture and half of the grated Gruyere cheese. Toss gently to combine.
  4. In another bowl, whisk together the eggs, milk, and heavy cream until smooth. Season with additional salt and pepper if desired.
  5. Pour the egg mixture over the bread and mushroom mixture. Gently stir to ensure that all the bread is soaked in the custard.
  6. Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining Gruyere cheese.
  7. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the custard is set.
  8. Once baked, remove from the oven and let it cool for about 10 minutes before serving.
  9. If desired, sprinkle fresh parsley on top for a pop of color and flavor.

Notes

  • Use day-old bread for better texture.
  • Feel free to add other vegetables or proteins as desired.
