Ingredients

  • 1.52 pounds new potatoes (tender and flavorful when grilled)
  • 911 pieces wooden skewers (soak in water for 30 minutes)
  • 0.50.67 cups bacon fat drippings (or substitute with olive oil)
  • 2.5 teaspoons salt
  • 2 teaspoons paprika
  • 2 teaspoons fresh rosemary (finely chopped)
  • 1.5 teaspoons black pepper
  • 1 lemon (for drizzling fresh juice)

Instructions

  1. Bring 8 cups of water to a rolling boil in a large pot. Stir in 1/2 teaspoon of salt.
  2. Wash the new potatoes and place them in the boiling water for 12-15 minutes.
  3. Prepare a large bowl filled with cold water and ice. Once the potatoes are done, drain and plunge into the ice bath for 10 minutes.
  4. Preheat your grill to 375°F (medium-high heat).
  5. Remove the potatoes from the ice bath and blot dry with paper towels.
  6. In a small bowl, combine remaining salt, black pepper, paprika, and chopped rosemary.
  7. Thread 3-4 potatoes onto each skewer. Brush with bacon drippings or olive oil and sprinkle seasoning on top.
  8. Place the skewers on the hot grill, cooking for 2 minutes per side until golden-brown.
  9. Remove from heat and drizzle fresh lemon juice over the skewers before serving.
