- 1.5–2 pounds new potatoes (tender and flavorful when grilled)
- 9–11 pieces wooden skewers (soak in water for 30 minutes)
- 0.5–0.67 cups bacon fat drippings (or substitute with olive oil)
- 2.5 teaspoons salt
- 2 teaspoons paprika
- 2 teaspoons fresh rosemary (finely chopped)
- 1.5 teaspoons black pepper
- 1 lemon (for drizzling fresh juice)
Instructions
- Bring 8 cups of water to a rolling boil in a large pot. Stir in 1/2 teaspoon of salt.
- Wash the new potatoes and place them in the boiling water for 12-15 minutes.
- Prepare a large bowl filled with cold water and ice. Once the potatoes are done, drain and plunge into the ice bath for 10 minutes.
- Preheat your grill to 375°F (medium-high heat).
- Remove the potatoes from the ice bath and blot dry with paper towels.
- In a small bowl, combine remaining salt, black pepper, paprika, and chopped rosemary.
- Thread 3-4 potatoes onto each skewer. Brush with bacon drippings or olive oil and sprinkle seasoning on top.
- Place the skewers on the hot grill, cooking for 2 minutes per side until golden-brown.
- Remove from heat and drizzle fresh lemon juice over the skewers before serving.
