  • 1 tablespoon rice vinegar
  • 1 tablespoon vegetable oil
  • 1 cup bell peppers, sliced (red, green, or yellow)
  • 1 cup broccoli florets
  • 2 green onions, chopped
  • Sesame seeds, for garnish

Instructions

  1. Cut the chicken thighs into bite-sized pieces and set aside.
  2. Make the Marinade: In a bowl, combine the gochujang, soy sauce, honey, sesame oil, minced garlic, minced ginger, and rice vinegar. Mix until well combined.
  3. Marinate the Chicken: Add the chicken pieces to the marinade, stirring to coat evenly. Let it marinate for at least 10 minutes.
  4. Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat.
  5. Cook the Chicken: Add the marinated chicken to the skillet. Sauté for about 8–10 minutes, or until the chicken is cooked through and slightly caramelized.
  6. Toss in the sliced bell peppers and broccoli florets. Cook for an additional 5–7 minutes until the vegetables are tender but still crisp.
  7. Garnish: Remove from heat and sprinkle with chopped green onions and sesame seeds for added flavor and crunch.
  8. Serve: Transfer the chicken and vegetables to a serving platter.
