Description

A festive guide to making picture-perfect Santa Claus Macarons, blending classic French technique with holiday cheer.

Ingredients

Scale
  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 cup powdered sugar (for buttercream)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Red gel food coloring (for Santa details)

Instructions

  1. Sift almond flour and powdered sugar into a bowl. Set aside.
  2. Whip egg whites with cream of tartar until foamy. Gradually add granulated sugar until stiff peaks form.
  3. Fold the dry ingredients into the meringue until batter flows like lava. Divide and color half red.
  4. Pipe circles onto mat. Tap tray to release air bubbles. Rest for 30-45 minutes.
  5. Bake at 300°F (150°C) for 15 minutes. Cool completely before removing.
  6. Beat butter until smooth. Add sugar, milk, and vanilla to make buttercream. Pipe and assemble macarons.

Notes

Adjust baking time according to your oven. For optimal texture, let filled macarons rest for 24 hours before consuming.
