  • 1 rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Shred the rotisserie chicken. Slice the mushrooms. Dice the onion, slice the carrots, chop the celery, and mince the garlic.
  2. Heat a splash of olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, chopped celery, and minced garlic. Cook for 5-7 minutes until softened.
  3. Stir in the sliced mushrooms and cook until they release their liquid, about 3-4 minutes.
  4. Pour in the chicken broth and bring to a gentle simmer. Add the dried thyme.
  5. Add the shredded rotisserie chicken to the pot. Let everything simmer together for about 20 minutes to allow the flavors to meld.
  6. Taste the soup and season with salt and pepper as needed.
  7. Ladle the rotisserie chicken mushroom soup into bowls and garnish with fresh parsley if desired.

Notes

  • For a creamy variation, stir in 1 cup of heavy cream or half-and-half near the end of cooking.
