- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup raspberry jam
- 1 cup white chocolate, chopped
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy. Add vanilla extract.
- Gradually mix in flour until the dough just comes together.
- Roll the dough out on a floured surface to approximately ¼ inch thickness.
- Evenly spread raspberry jam over the rolled dough.
- Roll the dough into a log and chill for 30 minutes.
- Slice the log into ¼ inch rounds and arrange on the baking sheet.
- Bake for 12–15 minutes until edges are lightly golden.
- Allow cookies to cool on a wire rack.
- Melt the white chocolate and drizzle over the cooled cookies.
Notes
For a cleaner slice, chill the log longer. Adding a splash of lemon juice to the jam can enhance flavors.
